No city does dining quite like Chicago, and our culinary scene includes diverse and creative options from around the world. While I can’t definitively prove it, I’d bet we hold the title of BYOB capital of the United States. With so many incredible BYOB (Bring Your Own Bottle) restaurants scattered throughout the city, selecting the right wine or spirit can take your meal up a level.
In May and August, I had the pleasure of sharing some of Chicago’s top BYOB restaurants and wine pairing recommendations on WGN’s Spotlight Chicago. This blog will revisit the list for these segments and provide a guide for your next BYOB dining adventure. When choosing wines for these experiences, I like to think in terms of “wine partnering” rather than “pairing.” Note, “wine partnering is something I created, so don’t go trying to impress your sommelier friends with this language. They will be confused! In my opinion, a true food and wine pairing aims for perfection, where you carefully match wines to known elements of the dish. In contrast, partnering seeks flexibility—a wine that complements a variety of flavors without needing intimate knowledge of every ingredient. This approach allows diners to enjoy wines that enhance their meal, even when the cuisine offers diverse and evolving flavors.
Before digging into our wine and spirits recommendations, one important reminder: always check a restaurant’s BYOB policy before bringing your own bottle. While many Chicago spots embrace BYOB, some may have restrictions or corkage fees that vary, so it’s best to call ahead with the list in the order that they were shown on TV.

Hermosa Chicago’s menu, steered by Chef Ethan Lim, centers around Cambodian-inspired cuisine. Traditionally, you might pair these flavors with a lighter white wine, but why not take a risk with a silky, fruit-forward red? The Merriam 2020 Right Bank Red Blend provides just enough structure to complement dishes while allowing its fruit notes to shine alongside the complex spices of Cambodian fare.
Green Dragon Tacos and Juice Bar, 2255 W Taylor St, Chicago, IL 60612
Featured Spirit: Kountry Vodka, $20
For a more casual BYOB experience, Green Dragon Tacos and Juice Bar is a great choice for modern taco lovers. Their juice bar, offering a variety of flavors,(the juices are on the sweet side) pairs with the creamy texture of Kountry Vodka, made from Midwestern corn and Kentucky water. This vodka’s smooth finish and subtle sweetness make it an excellent base for inventive cocktails to sip alongside your taco feast.
