Taste: Aged two years on the lees, which gives it toasty note. This wine also full malolatic fermentation which which provides a creamy texture. Great fruit, elegant.

Pairs With: This is a great aperitif, serve with egg dishes and fried foods.

When to Serve: This is the sparkling to serve when you want to impress your friends, but are on a budget. Made in the traditional method.

FYI: Scharffenberger Cellars has been making wine quality sparkling wine in Anderson Valley (American Viticultural Area) in western Mendicino County in Northern California since 1981. The winery is a few miles from the Pacific ocean. The coastal impact, deep soil and sunshine makes this area perfect for producing Chardonnay and Pinot Noir grapes. This winery changed names in 2004, it was previously called Pacific Echo. Tex Sawyer was the winemaker form 1989-2017. In 2018 Jeffery Jindra took over as Chief Winemaker. Read more on their site.
